Ciao a tutti. Erano ormai mesi e mesi che volevo provare a farne uno (per inciso, secondo me il cheesecake è maschile, quindi lo tratterò come tale), quindi Sonia Peronaci mi è venuta in aiuto, fornendomi una ricetta di base, che ovviamente ho un attimo rivisitato.
12 porzioni:
– 375g di biscotti digestive;
– 180g di burro;
– 30g di amido di mais (o maizena);
– 100ml di panna fresca;
– 300g di Philadelphia;
– 700g di Philadelphia Yo;
– 3 uova intere;
– 2 tuorli d’uovo;
– 2 bustina di vanillina;
– 150g di zucchero semolato;
– 300ml di crème fraîche;
– 2 cucchiai rasi di zucchero a velo;
– succo di limone, buccia di limone, fragole, menta fresca, zucchero di canna, rum scuro q. b.;
– preparazione della base: frullate i biscotti con circa 3 cucchiai di zucchero di canna e la buccia di mezzo limone grattugiata ed incorporatevi il burro fuso e mescolate fino ad ottenere un composto alquanto compatto; quindi imburrate una teglia con il bordo estraibile e distribuite il composto sulla base e sui bordi, cercando di mantenere uno spessore più o meno omogeneo; a questo punto lasciatela riposare almeno un’ora in frigorifero;
– preparazione della crema: ammorbidite bene la Philadelphia, quindi unitela alla panna ed iniziate ad incorporare piano piano con una spatola la maizena setacciata, lo zucchero, 1 bustina di vanillina, le uova intere ed i tuorli; dopo aver mescolato bene aggiungete due bei pizzichi di sale ed il succo di mezzo limone e ultimate la crema; quindi versatela nella base preparata prima ed infornate in forno pre-riscaldato a 180° per 40 minuti circa e poi abbassate la temperatura a 150° e lasciate stare in forno altri 20 minuti;
– preparazione della copertura: mescolate bene la crème fraîche con lo zucchero a velo setacciato ed 1 bustina di vanillina, quindi spalmatela sulla parta superiore del cheesecake e rimettetelo in forno a 150° per 5 minuti; quindi sfornate, lasciate raffreddare e poi riposare in frigorifero per almeno 5-6 ore;
– preparazione dello sciroppo: tagliate una bella manciata di fragole a pezzetti di qualsiasi dimensione preferiate, quindi mettetele in padella con 3-4 cucchiai di zucchero di canna; fate riscaldare e poi sfumatele con un mezzo bicchiere di rum, lasciando evaporare tutto l’alcol a fiamma alta; a questo punto aggiungete il succo di mezzo
limone ed un mezzo bicchiere d’acqua e lasciate bollire a fiamma moderata fino a raggiungere la consistenza desiderata; spegnete il fuoco ed aggiungete della menta fresca tritata, quindi lasciate raffreddare bene ed usatelo per guarnire le fette di cheesecake al
momento di servirle.
Di consigli ne potrei dare tanti, ma mi limiterò a dire che nella preparazione della base, al momento di imburrare la teglia, per stare sicuri potreste anche apporre un disco di carta da forno sulla base, o incartare la teglia per intero. Per quanto riguarda la
crema, regolatevi con il succo di limone a seconda del tipo di limoni che state utilizzando, e poi andrebbe bene anche il succo di un limone intero, ma sempre stando attenti, altrimenti potrebbe risultare in un retrogusto troppo aspro. Poi al posto della crème
fraîche potreste usare della panna fresca, o dello yogurt, oppure prepararla da voi, seguendo il semplice procedimento che trovate nella pagina Tips & tricks. Infine, per lo sciroppo, state solo attenti a non farlo diventare troppo denso, altrimenti sarà diventato caramello, quindi si indurirà non appena sarà un attimino più freddo; per riconoscere la densità giusta, basta far cadere una gocciolina di sciroppo in un bicchiere d’acqua fredda, e se si solidifica all’istante vuol dire che è ormai caramello. Divertitevi!
Traditional cheesecake with minted strawberries fresh syrup
How’s it going, everyone? It was months now that I wanted to try to make one on my own, and Sonia Peronaci offered her help giving me a very good recipe, that I’ve obviously modified.
12 servings:
– 375g of digestive biscuits;
– 180g of butter;
– 30g of corn flour;
– 100ml of fresh cream;
– 300g of Philadelphia cheese;
– 700g of Philadelphia Yo cheese;
– 3 eggs;
– 2 egg yolks;
– 2 sachets of vanillin;
– 150g of caster sugar;
– 300ml of crème fraîche;
– 2 tablespoon of icing sugar;
– lemon juice, lemon zest, strawberries, fresh mint, brown sugar, dark rum to taste;
– base preparation: blend the biscuits with 3 tablespoons of brown sugar and the zest of a half lemon, then add the butter (melted) and mix until you’ll have a nice and thick paste; then grease with some butter a baking tray (one of those with the removable rim) and flat down the paste all over the base and the inner rim, trying to give a homogeneous thickness; then let it rest in the fridge at least one hour;
– cream preparation: well soften the Philadelphia cheeses, then add the cream and begin to slowly mix in with a spatula the corn flour (sieved), the caster sugar, 1 sachet of vanillin, the whoe eggs and the yolks; after you’ll have well mixed everything add a couple of nice pinches of salt and the juice of a half lemon, then finish the cream; now pour it into the base you made before and put in a pre-heated oven 40 minutes at 180°C, and then 20 minutes more at 150°C;
– topping preparation: mix the crème fraîche with the icing sugar (better if sieved) and a sachet of vanillin, then spread the upper surface of the cheesecake with it and put it again in the oven at 150°C just 5 minutes; then let it cool down a bit and then rest in the fridge at least 5-6 hours;
– syrup preparation: cut a nice handful of strawberries into pieces of any size you like, then put them in a pan with 3-4 tablespoons of brown sugar; let the pan get warm and then pour a half glass of dark rum, letting all the alcohol evaporate over a high flame; now pour the juice of a half lemon and a half glass of water and let it boil over a moderate heat until you reach the thickness you’re searching for; turn off the heat and add some freshly chopped mint, then let it cool down before using it to decorate your cheesecake pieces when you’re serving them.
I could give so many suggestions, but I’ll just say that in the base preparation, when you’re gresing the baking tray, you could even think of using some baking paper on the base, or even all over the rim. About the cream, get to know which kind of lemon you’re using, so that you could think of using the juice of an entire lemon, but always being careful, otherwise it could result in a too sour aftertaste. Then, instead of crème fraîche you could use some fresh cream, or some yoghurt, or you could make it by yourself following the easy procedure you can find in Tips & tricks page. For last, about the syrup, be careful not to make it too thick, otherwise it will become caramel, so it will instantly harden as soon as it will be a bit cooler; to recognize the right thickness, just let a drop of syrup fall in a glass of cold water, and if it sets hard in one moment it means it’s already become caramel.
Maybe many international friends of mine (or international visitors who can certainly make a better cheesecake) would laugh watching at this recipe. But I’m always open to any kind of recommendation to impove myself. Have fun!
